Corn Bhel

A riot of flavours, typical of any chaat but with the sev adding a great new dimension.



Ingredients:

Boiled sweet corn kernels-1 cup
Chopped onions-1/2 cup
Chopped tomatoes -1/2 cup
Chopped green chillies-2 tbsp
Boiled potatoes(diced)-2
Chopped coriander -1/4
Lemon juice-1tbsp
Chat masala to taste
Green chutney-1 tbsp
Tamarind chutney- 1 tbsp
Sev-1/4 cup(optional)
Salt to taste


Method:

1. In bowl, mix boiled corns, onion, tomato, potatoes, chaat masala, green chillies, green chutney, sweet chutney and coriander leaves well.Add lemon juice, salt and mix.

2. Spread the bhel in a serving dish and sprinkle the sev over it.

3. Serve immediately.

Dry Chilli Paneer

This chatpata dry chilli paneer goes extremely well with any dish,as appetizer or as snacks.

Ingredients:

Paneer(cut into cube size)-200g
Salt to taste
Ginger garlic paste
Corn flour- 1 1/2tbsp
Water
Egg(optional)-1
All pupose flour(maida)-2-3tbsp
Cumin seeds-1 tbsp
Garlic(chopped)-4 cloves
Chopped green chillies-4
Onion(cut into cubes)-1/2
Coriander pwdr-1 tbsp
Chilli garlic sauce-1 tbsp
Ajinamoto-1 pinch
Red bell pepper(cut into small cubes)-1/2
Green bell pepper(cut into small cubes)-1/2
Chilli pwdr-1 tbsp
Soya sauce to taste
Curry leaves chopped-few
Lime juice-1 tbsp
Coriander leaves-1/4 bunch


Method:

Cut paneer into cube size.


In a bowl add salt,1/2tbsp of ginger-garlic paste,corn flour,2-3 tbsp of water,egg,mix well all this mixture.Pour this mixture on paneer,add little bit of maida and mix it.

Now heat oil in a pan and add fry this paneer cubes on medium flame.

Now add little bit of oil in a pan,add cumin seeds,chopped garlic,1/2tbsp of ginger garlic paste,chopped green chillies,onions,coriander pwdr.3-4 tbsp of water,chilli garlic sauce,pinch of ajinamoto,red n green bell pepper,red chilli pwdr,soya sauce,chopped curry leaves and add some salt to taste and little lime juice.

Mix well and to this add fried paneer cubes and chopped fresh coriander leaves .Enjoy this exotic recipe.


P.S.Adding egg is optional those who are vegetarian can only add water no need to add egg.

Pani Puris/Golgappy

"Pani puri/Golgappe lovers enjoy this mouth watering,yummy pani puris."

For Puris:

Ingredients:

Semolina(soji)-1 cup
All purpose flour(maida)-2 tbsp
Salt-1 pinch
Urad flour(optional)-1 pinch
Warm water-1 cup

Method:

Take sooji in a bowl, add pinch of salt and add just enough warm water so that it becomes kind of grainy.Mix well.Do not add too much of water.Add little maida just to absorb the mositure from the mixture.

Knead the dough very well.Dough should be medium tight.Add few drops of oil.Again knead the dough for 3-4 min.Let the dough rest for 20 min.

After that roll this dough to very thin.Apply little oil on the place where you are going to roll it so that it doesn't stick.

To cut this dough into nice round rolls you can use either real cutter or cap of any bottles.Fry these in oil on medium heat.See to it they puffed up nicely.After you fry them do not cover them. Use fresh refined oil for frying.


For Stuffing:

Ingredients:

Boiled channa
Boiled potatoes
Tomatoes chopped
Onion chopped
Cilantro chopped
Yoghurt
Sev/bundi
Chilli sauce(optional)

For Pani:

Ingredients:

Red chilli pwdr-1/2
Salt to taste
Cumin pwdr-1/2tbsp
Corriander pwdr-1/2 tbsp
Black salt-1/4tbsp
Pepper pwdr-1/4tbsp
Sugar-1tbsp
Mint leaves
Corinader leaves
Green chilli
Tamarind juice
Ginger-1/2inch
Method:
Take cold water in a bowl and add tamarind juice,little black salt,cumin pwder,coriander pwdr,mix well,add salt,little pepper pwdr,little red chilli pwdr,little sugar,and add crushed/paste of corriander leaves,mint leaves,very little ginger and green chilli to the pani.

Make small hole in the puri and put all the stuffing and dip it in the pani and have this tasty
pani puris.

Kachori Chat

A filling and delicious chaat - big sized crisp puris filled with a number of stuffings and chutneys.


Ingredients:
Semolina (suji)-1 cup
Refined flour (maida)-1tbsp
Red chilli powder-1/4tbsp
Salt to taste
Oil -to deep fry


Filling:

Boiled potatoes(1cm cubes)-2 medium
Moong sprouts-1/2cup
Boiled Channa-1/2cup
Maide ke papdi-10-12
Yoghurt (thick)- 1 cup
Cumin powder-1tbsp
Rock salt-1/2tbsp
Red chilli pwdr-1 tbsp
Tamarind chutney-1/2 cup
Green chilli chutney-2tbsp
Bhujia(sev)-1/2 cup
Fresh coriander leaves(chopped)-1/2 medium bunch

Method:

1. Make a stiff dough of suji, maida, red chilli powder and salt with water. Divide into four to six equal parts, roll into rotis of around five inches diameter and deep fry in hot oil on medium heat, turning once, till well puffed and crisp. After they cool down, ensure that they are not soft. If they are, fry again. Keep aside.

2. Dip the papadi in dahi/yoghurt.

3. Take one kachori in serving plate. Make a big hole in the centre. Fill with potato cubes, sprouted moong, boiled chana, papdi dipped in yogurt.

4. Sprinkle roasted cumin powder, rock salt powder, red chilli powder, tamarind chutney, yogurt, green chilli chutney, sev and coriander leaves. Serve immediately before it becomes soggy.

Aloo chat

Ingredients:

Potatoes, boiled-4-5 large
Ghee-2tbsp
Cumin seeds-1tbsp
Green chillies, chopped-3
Ginger, chopped-1inch piece
Sugar-1tbsp
Salt to taste
Roasted peanuts-1/4 cup
Roasted peanuts, crushed-2tbsp
Coriander leaves(chopped)-1/4 bunch
Batata chewda -1/2 cup


Method:

1.Cut potatoes into half inch sized cubes.
2.Heat ghee in a kadai, add cumin seeds. When they change colour add the green chillies and ginger and fry for a minute.
3.Add potato cubes and toss. Add one and a half cups of water, sugar and salt and mix. Add peanuts and crushed peanuts and continue to boil, mashing the potatoes slightly. Reduce heat and simmer till slightly thick.
4.Add half the coriander leaves and mix.
5.Transfer into a serving dish, sprinkle batata chewda and the remaining coriander leaves on top and serve immediately.
